Blackened Chicken Fettuccine Alfredo

This was my first time making this meal, and it was so easy and yummy that I wanted to share it with you! (maybe it was so easy because I used sauce in a jar & noodles from the package...but let's just focus on the chicken, okay?? ;)

-9 oz. package of fettuccine
-1 jar of Newman's Own Alfredo pasta sauce
-2 boneless, skinless chicken breasts
-1 teaspoon paprika
-1/2 teaspoon cayenne pepper
-1/2 teaspoon ground cumin
-1/2 teaspoon dried thyme
-1/2 teaspoon salt
-1/4 teaspoon pepper
-1/4 teaspoon onion powder

(and if you have a family that likes to eat, you can double this recipe like I did.)

Lightly spray a 9 x 13 baking dish with cooking spray. Set aside. Preheat oven to 350 degrees.

Pound the chicken until quite thin (around 1/4 inch thick). Mix all of the spice ingredients together in a bowl. Coat both sides of the chicken breasts with the spices, and rub the mixture into the chicken.



Heat a non-stick grill pan or skillet over medium heat. Place chicken breasts in pan and brown both sides, 45-60 seconds per side. (This part is optional, but it helps give the chicken a nice "blackened" color.) Then place chicken in prepared baking pan and bake in oven for about 10 minutes, (or until meat is white inside) and flip them half way through. Baking the chicken helps keep it moist.
Remove the chicken from the oven and slice into strips. While the chicken is cooking, you can prepare the pasta according to the package directions. Heat the sauce in a pan on the stove top, then pour over hot, drained pasta. Serve pasta with sliced chicken on top. Serves 4.

I also served it with some garlic french bread and balsamic vinegar & olive oil for dipping.

the good & the bad

                          Today I thought I would share the "real" behind pictures.
Let me explain: some of the time, a cute & happy picture of Ellie is then followed by a grumpy, fussy Ellie...in which the happy picture doesn't show.  :) So today, instead of just showing the happy pictures, I thought I would show you a little 'behind the scenes'.

Exhibit A: A wonderful summer day visit to Bridal Veil Falls. All splishy and splashy, fun & games, with freaking adorable water shoes and the cutest chubby baby legs you've ever seen... right???

July Vogue issue-Emma Watson

Is anyone else obsessed with the July 2011 Vogue cover? Emma Watson looks STUNNING! I love her dark lips and the orange and red tones. Although I am not ready for Fall ONE bit....this cover screams that season, and I am loving the look.
Emma is so down to earth, I just love her! The article about her is well written and I learned a lot about her that I didn't know. Did you know that she refused to renew her contract for the last two Harry Potter films unless changes were made to accommodate her desire to go to Brown University? The fact that she wants a normal life, and wants to be educated like anyone else her age, is awesome.
Another thing that she said in the interview was that she would rather wear young British designers who need the publicity, rather than wear the big brands. I thought that was cool.

Emma is a romantic, and I love what she said;
"I'm a feminist, but I think that romance has been taken away a bit for my generation. I think what people connect with in novels is this idea of an overpowering, encompassing love--and it being more important and special than anything and everything else."
so very true.

I adore her.

Hair product favs

I wanted to share with you two hair products that I LOVE! I have only been using them for a few weeks, but I can now say that I can't live with out them.

First is the Moroccan Oil. Has anyone else tried this stuff? You put a little bit of it on damp hair before you blow dry, and it strengthens and conditions your hair-- & it makes your locks so soft! You can also use a little bit on your dry hair to make it silky and it smooths out those fly aways. It is great for any type of hair- and works great on coarse, dry hair. (for you blondes, make sure you get the "light" oil)




 Next up is the Redken All Soft Heavy Cream. You can put this on after your shampoo your hair and leave it on for fifteen minutes for a deep conditioning treatment, or you can use it as your daily conditioner and leave it on for five minutes. It smells so good and works wonders on split ends and damaged hair! oohh I love this stuff. Perfect for when the summer sun dries out your hair.

I had to restrain myself from stopping the lady from taking that first snip...but after the 6 inches came off, it's lighter & healthier...and ... it's just hair, so it will grow back;) For now, it's fun. --and if I catch anyone telling me I got a "mom haircut",

the best guy I know

After tonight's events of chasing a hyper toddler around a theater, (why did I even think that a movie was possible with Ellie?!?)   I feel the need to give my dad an early Father's Day shout out. He is always willing to help me with Ellie, even if it means missing part of a movie that he has been wanting to see. Anyone who knows my dad, knows that he is the sweetest, kindest, hardest working, most selfless man i've ever known. I know everyone says their dad is the best....but I happen to think mine is above the rest.

I had the opportunity to shoot with the amazing Mitchel Issel last weekend and I had so much fun! It was my first time working with a film photographer and I was so intrigued and fascinated by the process. I now know how much effort and work goes in to getting a great shot on film...the photographer has to make sure the light and everything is perfect...because after he takes the shot, he can't go back and edit it, nor can he see it right after he takes it-- like on digital cameras. Mitch was great to work with and we are already planning on taking some mommy & ellie candid pics that I can't wait for:) 
I think I fell in love with film.

my opinion on the MTV movie awards ....

Did anyone watch the MTV 2011 movie awards? I could barely stand watching them....it seemed so unorganized and unrehearsed that I sort of felt....awkward even watching it.

and I guess I must be out of the Twilight loop, because I am SO SICK of the world revolving around that movie. They won every single award. again.Yes, i've read the books and seen the movies and I STILL don't get it... Am I the only one who thinks that the winners of those awards were somehow set up? :)

Like how Hit Girl didn't win for best fight scene. I mean come on! She kicked ass in Kick Ass. and like how Justin Bieber won for best draw dropping moment?! uhhh Don't get me wrong...I am still in love with the kid, but James Franco's freaking arm being cut off wasn't enough to win? and how cute Emma Watson was, while she just sat and watched every award that she was nominated for, go to that annoying Twilight chick. and how Harry Potter didn't win anything?! WTF. and how Edward from Twilight...(is that his name?) totally screwed up Reese Witherspoon's big award intro....whom by the way, i LOVE....Her speech was awesome. I love her modest attitude towards the younger aspiring generation. . . and did Robert Pattinson really go kiss his male costar? yuck. that doesn't amuse me one bit.

 I think i'm just in a bad mood today.....or maybe I am just a grandma and don't understand anything about these current cultural obsessions.... but I was not at all happy with the awards show. Can ya tell??

8 years

Today I caught myself in a daze, staring out the window and thinking about what today was like 8 years ago. I was 14 and I remember sitting on the couch next to my mom watching Miss Universe like we did every year. She asked me if I would put her mascara on for her because she was too weak. She was the most beautiful person I knew, hair or no hair, mascara or no mascara. But I loved getting out her makeup bag and spending that precious time with her, laughing at how awful I was at doing makeup. :)
I don't remember much after that. Everything just happened so fast. I couldn't register what was happening. The shock stayed with me for days, and weeks and months. Until I finally realized that she wasn't coming back.
I have since then grown and realized that death is a part of life. It was tragic that hers was cut short, but there is a plan for everyone and she lived her life to the fullest.  I need to focus on the things that she taught me during the time that I did have her in my life. I am grateful for the person that she was, and the way she lived her life.  She gives me strength every day to over come anything that I might be going through, and she makes me want to be the best mom I can be to little miss Ellie. I am so blessed to have such a strong family to keep me going, and for Whitney for always remembering the 3rd of June. :)

Ellie is the queen of making funny faces. I never know what this crazy lil' gal will come up with next!



 Ellie's new obsession = her pink lawn chair. She pushed it all over the grocery store where we bought it at, and since then, HAS to sit in it first thing every time we come home.

    She seems to ALWAYS fall asleep with something in her hand. I just think it is the cutest thing ever!

ohhh my goodness. This girl is quite the little diva! She put bags, purses, you name it- on her arm and will walk around the house waving her hand, saying, "BUH BYE!"  Not to mention, she brushes her hair constantly, while checking herself out in the mirror.
I'm seriously in for it with this girl!

my bedroom makeover design board

I am in the process of re-decorating my bedroom and I can't wait! The only problem is... I like SO many different styles, and I had a hard time choosing. So, I sort of mixed a lot of different patterns and styles together, and I am just going to cross my fingers. ;)   Interior design is something that I love! This is really the first time I have decorated a room, so I am not going to be too hard on myself if it doesn't turn out the way I invisioned it.

I wanted to go with a nuetral grey wall, and add pops of color in the pillows, curtains, rug, etc. That way, if I get sick of my room after a while, (which I tend to always do) then it will be easy to switch out those accent pieces, instead of re-painting the walls.

Here are some stuff I threw together in hopes of deciding what I want to put in my room. It is pretty girlie compared to what I am used to, but I am excited to try something new.

My friend Whitney happens to have a sweeeet job of taking care of horses all day and teaching kids to ride! So, Ellie and I decided to go visit. Ellie was shy at first, but it didn't take long for her to start feeding the horses hay and giving them kisses.
